In fact, your video is NOT inverted.
Unlike other tools that mirror the local camera to your own preview but do not invert for other people, eyeson shows you the video which has already been sent to the server and received back from there while you are listening to your own voice at the moment you are talking.
This can give you the feeling that your camera is inverted, however, for others you look perfectly fine from a left/right/mirror perspective.
